The Church has always taught that God created man and woman in His image and likeness with dominion over sea creatures animals bugs etc. So all things that have life animals plants humans etc. Animals have a mortal soul.
When I got older however I learned Catholic doctrine taught that animals even dogs did not have souls and therefore did not go to heaven. The implication of saying that men have wills and animals dont is that men can at least in principle choose what they understand to be good even when its not what their senses immediately perceive as good. Therefore all animals that die before the advent of Christs second coming will not exist in the new heaven and new earth. Genesis chapter 1 teaches that animals have souls. It does not need redemption.
The souls that animals have are entirely dependent on their material makeup. In the case of animals the soul goes out of existence. Nevertheless any human being with common sense knows that animal souls are different than plant souls and both are different than human souls.
